Thai Mango Salad with Prunes
Create a fruity Thai salad with mangoes and California prunes: add a twist with crunchy cashews, chilli pepper, the tangy flavours of coriander and lime.

Ingredienser
2 firm mangoes
100 g snow peas
150 g Sunsweet prunes
50 g cashew nuts
50 g peanuts
1 bunch of Thai basil
1 bunch of coriander
3 red chilli peppers
50 ml lime juice
4 tbsp. fish sauce
5 tbsp. peanut oil
Fremgangsmåte
- Peel and thinly slice mangoes. Cut snow peas into thin strips. Quarter prunes. Chop nuts coarsely and roast in a pan without oil. Coarsely chop herbs. Thinly slice chilli. Set aside.
- Stir lime juice, fish sauce, and oil until smooth. Mix ingredients set aside with the dressing. Marinate salad for 10 minutes and serve.
