Sunsweet Birthday Cake
A fruity alternative to a traditional sponge cake, our Sunsweet Birthday Cake – with its cream cheese frosting – is as pretty as a picture, too. Sunsweet prunes and vanilla extract add richness.

Ingredienser
Cake:
300g sugar
225g butter, softened
4 eggs
325g flour
2 tsp baking powder
1 tsp salt
180ml buttermilk
225g Sunsweet prunes, chopped
Cream Cheese Frosting:
450g cream cheese, softened
150g butter, softened
2 tsp vanilla extract
200g-250g icing sugar
Fremgangsmåte
- Cake: Preheat oven to 180°C and butter two 8″ round baking pans.
- Cream sugar and butter in a large bowl with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each. Stir together flour, baking powder and salt in a medium bowl.
- Add to butter mixture alternately with buttermilk. Stir in prunes and spread equal amounts into each pan.
- Bake for 45 minutes, until a toothpick inserted into the center comes out clean. Let cool in pans; carefully remove.
- Spread frosting between layers, and on the top andsides of cake.
- Frosting: Beat together cream cheese, butter and vanilla extract in a medium bowl until light and fluffy. Gradually beat in icing sugar until smooth.
Tip: For evenly level layers, wrap dampened cake strips around the pans before baking.
