Peanut Butter Chocolate Covered Prunes

Ingredients

170g Pitted Prunes<
2 tbsp creamy peanut butter
2 tbsp chopped roasted peanuts
110g dark chocolate bar, cut into chunks
1 tsp coconut oil

Instructions

  1. Fill the hole of each prune with peanut butter and sprinkle with chopped peanuts.
  2. Insert a toothpick through each stuffed prune lengthwise.
  3. Place the chocolate and coconut oil in a microwave-safe bowl. Micro-wave on high at30-second intervals, mixing in between each interval, until all the chocolate is melted.
  4. Cover each stuffed prune with chocolate by holding the toothpick with one hand, and spooning the melted chocolate over the prune to coat it completely.
  5. Transfer the chocolate-covered prunes to a tray or plate lined with parchment paper and sprinkle the tops with the remaining chopped pea-nuts.
  6. Place in the freezer for 10 minutes to allow the chocolate to set, then serve.
