Gingered Prunes

Sunsweet prunes and juice are combined with zingy ginger, fresh lemon and honey in this super versatile dish. It can be served warm or cold for breakfast but it’s lovely alongside meat dishes, too.

525g Sunsweet prunes
480ml Sunsweet Prune Juice
90g peeled fresh ginger, finely chopped
1 lemon, sliced and seeded
Honey to taste (optional)

Instructions

  1. In a medium saucepan, bring all ingredients except honey to a boil. Reduce heat and simmer uncovered for 15 minutes, or until excess liquid has cooked off, stirring occasionally. Add honey if a sweeter taste is preferred.

TIP: serve warm or cold as a breakfast side, alongside meat dishes, or as a light dessert.
