Peanut Butter Chocolate Covered Prunes

170g Pitted Prunes<
2 tbsp creamy peanut butter
2 tbsp chopped roasted peanuts
110g dark chocolate bar, cut into chunks
1 tsp coconut oil
Instructions
- Fill the hole of each prune with peanut butter and sprinkle with chopped peanuts.
- Insert a toothpick through each stuffed prune lengthwise.
- Place the chocolate and coconut oil in a microwave-safe bowl. Micro-wave on high at30-second intervals, mixing in between each interval, until all the chocolate is melted.
- Cover each stuffed prune with chocolate by holding the toothpick with one hand, and spooning the melted chocolate over the prune to coat it completely.
- Transfer the chocolate-covered prunes to a tray or plate lined with parchment paper and sprinkle the tops with the remaining chopped pea-nuts.
- Place in the freezer for 10 minutes to allow the chocolate to set, then serve.
