Thai Mango Salad with Prunes

Create a fruity Thai salad with mangoes and California prunes: add a twist with crunchy cashews, chilli pepper, the tangy flavours of coriander and lime.

2 firm mangoes
100 g snow peas
150 g Sunsweet prunes
50 g cashew nuts
50 g peanuts
1 bunch of Thai basil
1 bunch of coriander
3 red chilli peppers
50 ml lime juice
4 tbsp. fish sauce
5 tbsp. peanut oil

Fremgangsmåte

  1. Peel and thinly slice mangoes. Cut snow peas into thin strips. Quarter prunes. Chop nuts coarsely and roast in a pan without oil. Coarsely chop herbs. Thinly slice chilli. Set aside.
  2. Stir lime juice, fish sauce, and oil until smooth. Mix ingredients set aside with the dressing. Marinate salad for 10 minutes and serve.
