Prune and Brussels Sprout Salad

Ingredienser
3 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
1 Tbsp honey
1/2 tsp sea salt
Freshly ground pepper to taste
350g Brussels sprouts, thinly sliced or shaved
100g Sunsweet prunes, diced
1/2 red onion, quartered and thinly sliced
5 strips thick cut bacon, cooked crisp and coarsely crumbled
25g almonds, sliced and toasted
Fremgangsmåte
- Whisk together oil, vinegar, honey, salt and pepper in a large bowl.
- Add Brussels sprouts and toss well to coat.
- Add diced prunes, onion and bacon, toss again.
- Sprinkle with almonds just before serving.
- Salad is best served within 1 hour.
