Pumpkin Prune Loaf

Ingredienti

1 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 tsp nutmeg
1/4 tsp cloves
1/4 tsp allspice
1/4 tsp salt
1 cup canned pure pumpkin purée
1 cup granulated sugar
1/3 cup olive oil
2 eggs, beaten
1 cup chopped walnuts, divided
3/4 cup chopped Prunes
1/2 cup mini chocolate chips

Procedimento

  1. Preheat oven to 350°F. Line 9 x 5-inch loaf pan with parchment paper.
  2. In small bowl, whisk together flour, baking soda, spices, and salt.
  3. In a large bowl, stir together pumpkin purée, sugar and oil until smooth. Whisk in eggs. Add flour mixture to pumpkin mixture and stir until just combined.
  4. Set aside 1 Tbsp walnuts and stir remaining walnuts into batter. Add prunes and chocolate chips. Stir until combined. Pour into prepared loaf pan. Sprinkle with reserved walnuts.
  5. Bake for 1 hour or until loaf springs back when touched.
  6. Let cool for 15 minutes before slicing.
