Don’t be put off by the list of ingredients in this recipe! Almost all the work, which isn’t much, is in the preparation, and then the soup practically cooks itself. AND it’s bursting with vitamins and other nutrients.
2 tablespoons rapeseed oil
1 onion, peeled and diced
1 tsp cumin
1 tsp dried coriander
1/2 tsp turmeric
1/4 tsp cinnamon powder
2 cloves of garlic, peeled and finely chopped
3 medium-sized carrots, peeled, trimmed and diced
150g dried red lentils
100g ready-to-eat Sunsweet Prunes, roughly chopped
400g can chopped tomatoes
600 ml vegetable or chicken stock
Juice of 1/2 lemon
1 tbsp chopped coriander
1 tbsp chopped parsley
Note: this soup can be pureed but it’s more of a meal left chunky.
