Turkey Roulade with Prune Filling

This juicy, succulent and flavourful dinner makes for a great alternative to traditional turkey

4 thin slices of turkey breast ( 180 g per piece)
150 g Sunsweet prunes
4 slices Parma ham
1 small bunch of rocket salad
150 g crème fraîche
2 onions
1 glass (400 ml) chicken stock
1 piece of organic lemon peel
3 tbsp light gravy thickener
4 tsp medium-strength mustard
4 tsp Ajvar (spicy paprika paste)
2 tbsp oil
Salt, pepper

Valmistus

  1. Pound the turkey breast, season with salt and pepper and spread on mustard and Ajvar.
  2. Peel onion and cut into strips. Rinse rocket salad, shake dry and clean. Top meat with parma ham, onions, rocket and prunes and tie up with kitchen yarn or pin with skewers.
  3. Heat oil in a pot and fry roulades from all sides. Add chicken stock and lemon peel. Simmer the roulades for about 25-30 minutes at medium heat.
  4. Whisk crème fraîche and bring to boil. Spread in the gravy thickener and simmer for 3 minutes. Season with salt and pepper. Serve with broccoli and boiled potatoes.
